Hello Bill. I wanted to ask you more about this that you wrote:

"Diet, if you are spending all this money on hormones, and not eating properly, you are just wasting your money. A good diet is a balanced diet. 45% protein, 35% carbohydrates and 20% fat."

Can you please tell me how many meals a day you have, and what a typical day's meals consist of, breakfast, lunch and supper, and in between?

What supplements do you take, such as creatine, protein powders, vitamins, etc.?

I try to eat 6 times in a day.

Breakfast starts with a Whey protein shake. In this shake, I mix creatine (1 Tablespoon), 1 Tablespoon Lecithin, 1 Tbsp. Flaxseed oil, 1 Tbsp. Psyllium , 4 oz. plain low fat yogurt, 1 tbsp Green barley, 1/2 package of microwave oatmeal. Mix well in blender, and you have a pretty good tasting drink. 41 grams protein, 35 grams carbs, and 16 grams of good fat. I then have a cup of coffee and 1 slice of toast, and 1 banana.

Mid morning, snack or meal will vary from 1 MetRx protein bar OR 3 hardboiled egg whites. Water or juice. (I drink at least 2 quarts of water daily).

Lunch is 4 oz. chicken, sandwich or plain, 1 tomato. Juice or water.

Mid afternoon, a protein bar (MetRx or Balance bar,) apple or banana.

Dinner, Fish, Chicken, or lean Beef or Veal. a salad, potatoes (4 oz.) or pasta (2 oz.)

Mid evening 9:30 PM some peanuts or fruit. Sometimes 8 oz of non-fat yogurt.

Supplements: Daily, I take a multi vitamin, a multi mineral, 2000 mgs. Vitamin C, Vitamin E d'alpha, 800 ius, and Saw Palmetto herb.


If we analyze Bill's diet, we see that it is much higher in protein and much lower in fat and carbohydrates than the typical diet.

From this I realized the following general principles, which I try to follow in my own diet:

PROTEIN IS KING because it helps build muscle, because it does not raise blood glucose levels very high or very fast, and because it keeps me from having hypoglycemia.

CARBOHYDRATES are generally BAD IN ABUNDANCE, because they RAISE BLOOD GLUCOSE far above 100 mg/dl, which causes LOSS OF NEURONS...

FAT in my body is generally bad. I want enough fat to be healthy, but not excess fat. FAT IN THE FOOD does not raise blood glucose, so it does not cause LOSS OF NEURONS. Fat does not get stored in our body UNLESS blood glucose is high, which causes the pancreas to secrete INSULIN, which they allows the cells to STORE FAT.

Therefore: FAT + CARBOHYDRATES is VERY BAD.
FAT + PROTEIN + VERY LITTLE OR NO CARB will PASS THROUGH THE BODY and WILL NOT BE STORED in our body.

So... PROTEIN IS KING, FAT CAN BE NEUTRAL or BAD depending on whether or not it is eaten with Carbs... And Carbohydrates are neutral if eaten in very low quantity, but it is very easy to eat too much carbs. So in general, AVOID CARBS all that you can, except the little amount of carbs that there are in VEGETABLES. FRUITS contain twice as much carbs as VEGETABLES, so try to avoid fruits completely, or eat very small portions of Fruits.

CHECK YOUR BLOOD GLUCOSE to decide if you ate too much Fruits or other food. Blood glucose should be CLOSE TO 85 MG/DL for as much of the day as possible, to avoid LOSS OF NEURONS.

The worst enemies in my diet are, above all, SUGAR... and Fat...

Smoking tobacco and drinking alcohol are both terrible for my body. I don't smoke and I do not drink alcohol, except occasionally, and very little.

Avoid Fruits... Avoid Potatoes, spaghetti and all pasta, rice, pizza, Bread, candies, honey and marmalade, and SUGAR.

Avoid excess Fat... but eat it if it comes with Protein! (example: eggs, low fat milk, lean meat, or chicken without skin, or fish...)

Always Avoid Fried Foods!

Chicken and Fish are better than Beef and Mutton!

Sugar is very bad... avoid it if you can, use sugar substitutes or no sugar at all!

Foods with very low fat and plenty of protein are egg whites, and non-fat milk or yoghurt. Protein shakes are excellent, although they are far more expensive than egg whites and non-fat milk... but they are also very convenient and easy to prepare.

Foods with plenty of protein and low fat are chicken (or turkey) or fish... of course: better roasted than fried.

Foods with plenty of good protein and some fat are whole eggs and beef...

So... After years of not understanding these important principles, now I finally seek protein, even if it is mixed with some fat... so I do eat eggs when I want a lot of protein and also to go up in muscle volume, because eggs are full of excellent protein and vitamins, even if they do contain 6 grams of fat... and I take 4 to 8 grams of chitosan and psyllium plantago to absorb and cancel out the extra fat in my foods.

I eat plenty of raw vegetables, because they have a low amount of carbohydrates, no fat, and some protein... and they also contain a lot of good vitamins, and fiber, and good enzymes. I make no distinction between "simple carbs" and "complex carbs". The terms are not well understood by "experts" but they use them anyways. Vegetables have few carbs, so the "experts" made up a new term and called foods with few carbs "complex carbs"...

IN GENERAL: I DO NOT BELIEVE EXPERTS... I ONLY BELIEVE THE GLUCOSE METER. If the glucose meter tells me that my blood glucose is close to 85 mg/dl, or between 70 mg/dl and 100 mg/dl most of the day, in general the food I ate is HEALTHY for me, and will not cause loss of neurons.

Fruits such as apples, grapes, and pineapple contain some of the best digestive enzymes in all of Nature, and this has been a known fact for thousands of years. These fruits are even mentioned in the sacred books of many religions. However, they will raise blood glucose above 100 mg/dl so I must avoid them, or I can eat a very small portion.

TO GO DOWN IN WEIGHT I eat as above, avoiding whole eggs and beef, with twice as much fruits and vegetables as normal, and do aerobic exercises.

TO GO UP IN WEIGHT I would eat as above, without avoiding eggs and beef, and drinking at least 2 protein shakes per day between meals, and do weight lifting exercises.

Males should take a blood test and if they are low on testosterone, it would be a good idea to replace testosterone. Women can take a shot or two of Deca-Durabolin, which has little masculinizing effects and a lot of muscle building effects.

Hi Ellis,

Just to give you my feedback, I started using HGH 3 months ago at 1 iu per day. I had a slight headache for the first week, but then it went away. In a retrospect, I should have lowered my dose and let my body slowly adjust to it.

The results are very subtle. I still have crows feet by my eyes, and I don't see the backs of my hands being any different. However, small wrinkles above my upper lip disappeared, my lips are plumper, and they regained the vibrant color that they had when I was younger.

Recently I went to a wedding and met people that I didn't see for years; they said that I did not change at all. Some of the people that see me every day at my work say that I look good, and others look at me carefully as if they were trying to detect scars from incisions after plastic surgery. BUT THERE AREN'T ANY. It's like having a face lift from the inside; no scars. People notice my youthful appearance but they can't put their finger on the reason why?

I also noticed that I have more muscles and my mood has improved. I am beginning to feel happy and optimistic as I used to until last couple of years (I'm now 52). I hope that this trend continues.

Hi Ellis,

My wife wants to thank you, (and I want to thank you also) because since I have been controlling my sugar, I am not as moody.... For the last few years I was really irritable... I guess when your blood sugar is 200 to 400 all day it can make you grumpy....not to mention shorten your life..
Just think, last November my blood sugar was 300 in the mornings, before eating. Now it's 85-105 in the morning... My HbA1c was 8.3, and now as of two days ago it was 5.3%... not perfect "according to Ellis," but definitely not usual for diabetics.

My doctor couldn`t believe it, or understand it: diet, insulin and Ellis!

Hi Ellis,

"I am a plastic surgeon in Shreveport, Louisiana. I just found your two sites on the Internet. I've read your personal experience site twice and have read much of the Message board that contains over 6,000 messages. They are excellent.

I became interested in growth hormone and antiaging three years ago and have been taking growth hormone at bedtime for over two years. Like you, my results have been impressive. I'm 57 years old. I am 6 ft 1 in and weight 202 pounds with 9% body fat. I exercise regularly ( 5 times a week) and do moderate weight training.

My diet is good, high protein, moderate complex carbs and low fat. After reading your page I certainly need to improve it some.

Due to my personal results, I started offering anti-aging and growth hormone replacement to my patients 8 months ago. I've read much of the literature and have attended two meetings of the American Academy of AntiAging Medicine. Although it only been a few months my patients are THRILLED about the therapy and almost all are reporting specific areas of improvement.

Thanks so much for your work in this area. I want to return to Puebla for more Spanish education. Possibly I could include some time in Mexice City also. I would love to meet you.

"Here is my honest opinion of Dr. XXXXX: He is a very smart man and very kind, but his office is a chaotic mess and he is extremely understaffed. Since as a patient I can never speak to him on the phone etc. it is impossible to work closely enough with him to get proper dosing etc. He is so busy though that it is impossible to be monitored by him the way one should be when starting any hormone therapy. His phone is always busy, appts. are hard to come by and he is VERY expensive. The average visit ends up costing anywhere from $500-$750 depending on what he wants to do, such as blood draws, bone density testing etc. I plan to never go back.

I am currently using a small portion of progesterone which was recommended by him and have been taking DHEA and melatonin to help lower my cortisol levels. I buy my HGH from you, of course, and most of the other supplements he had me take made me sick, so I stopped taking them." - (a female patient of Dr. XXXXX (a very well known and competent and expensive doctor.)
